Spice Mix/Masala Chai Recipe

Simple homemade Spice Mix and warming Masala Chai by our resident Chef Cindy - Warragul Farmers Market

Spice Mix - makes around 1 1/4 cups
Ingredients:

  • 40g or 1/4 cup green cardamom whole pods

  • 3-4 cinnamon quills/sticks

  • 2 tbsp whole black peppercorns

  • 6-8 tsp whole cloves

  • 4 tsp whole fennel seeds

  • 1/2 tbsp nutmeg

  • 2 tbsp ground ginger

Method:

  1. Place all spices (except for ground ginger) in a dry non-stick pan

  2. Heat over medium heat and keep moving the spices in the pan until they are fragrant. The time depends on your stove and also the type of pan

  3. Remove the spices from the pan and place in a bowl

  4. In batches, process the whole spics in a spice blender until completely ground

  5. Place the ground spices in a large jar and add the ground ginger. Mix thoroughly

  6. Keep the spice mix in an airtight glass jar

Spiced tea/ Masala Chai - for 2 people

Ingredients:

  • 2 cups water

  • 15g good quality loose leaf black tea (ie. Assam tea or Earl Grey)

  • 2 tsp spice mix

  • 240mL Gippsland Jersey full cream milk

  • BlueTree Honey to sweeten/taste

Method:

  1. Place the water, tea and spice mix in a medium saucepan

  2. Put the lid on and bring the water to a boil. When the water is boiling, remove the lid and adjust the heat of your stove to allow the tea to simmer for 4-5 minutes

  3. Stir in the milk and increase the heat to allow the tea to come to a simmer. Let simmer for 1 minute

  4. Strain the tea from the liquid and discard.

  5. Add honey to sweeten the liquid

  6. Serve immediately
