Monday night salad inspo @wilderbean_ ・・・ A superfood salad for our super-mum at Mother’s Day lunch yesterday, featuring roasted chickpeas and pomegranate 💕 . . Sal recently moved into a house with a pomegranate tree in the backyard (the real reason they chose the place 😉) so we’ve been experimenting with all things to do with this delicious fruit. They’re currently in season in Australia and are oh so juicy and sweet, as well as being high in vitamin C and antioxidants. 
Ingredients: 1 cup of roast chickpeas 1 cup of quinoa, cooked ½ pomegranate 2 tbsp pepitas 2 tbsp sun flower seeds ½ bunch shredded mint ½ avocado 1 bunch rocket Optional: tahini dressing
