New season garlic is delicious

It’s impossible not to get excited by spring, a season full of hope and promise, longer days and warmer weather. New season garlic is deliciously sweet and mellow and so good for you.

There’s a recipe to inspire you …This simple no-knead focaccia, flavored with roasted garlic is delicious.It all starts with roasted garlic.

Drizzle a whole head of garlic with olive oil, wrap it in foil, and throw it in the oven at 180°C until it’s tender and sweet, which takes about an hour.

Once it’s cooked, toss it in the fridge and turn your attention to the dough made with bread flour, yeast, salt, and water.

For the Focaccia:

  • 1 whole head garlic

  • 5 tablespoons extra-virgin olive oil

  • Kosher salt, for seasoning

  • 500g all-purpose or bread flour

  • 325g water

  • 1 tablespoon kosher salt

  • 4g instant yeast (about 1 teaspoon)

    For the Garlic Butter:

  • 2 tablespoons butter

  • 2 teaspoons dried oregano

  • 1/2 teaspoon red pepper flakes
