Here’s Nadine from @wattlebank_park_farm Special family recipe for her famous Sticky Pork Belly.

1.5kg pork belly
1 brown onion
2 sticks of celery
2 star anise
4 cardamom pods
1 stick cinnamon
Preheat oven 180 degrees
In a large baking dish place one onion quartered, two garlic cloves, two carrots and two sticks of celery, 2 star anise 4 cardamom pods and a cinnamon stick. Place Pork belly skin side up in the baking dish and cover with chicken stock add salt and pepper to taste. Cover with foil and bake in oven 3hrs
When cooked remove from pan place on a flat board place another board onto and weight down refrigerate until cool
Cut into squares reheat on a grill skin side down until crisp turn and heat from the bottom once heated dip into hot sticky sauce and plate.
1 cup brown sugar
1 table spoon say sauce
½ cup molasses
½ cup cooking stock
Place all ingredients in a pot stir until sugar is dissolved simmer for 10 mins or until a sticky sauce then you are ready to use
